The Variedad Colombia varietal was first produced in 1982 and is a hybrid of Caturra and Timar to combat "leaf Rust" in Colombia. This coffee is processed using dry anaerobic fermentation then pulped and left to ferment under water for 28 hours then dried on raised beds until it reaches the ideal water content. We are excited to present this coffee as the washed coffee to partner the honey and natural processed coffees in our colombian show case.
